Mini Chocolate Chip Cookies

Mini Chocolate-Chip Cookies


Saw this recipe on the Weight Watchers Web Page and HAD to share it. It gives you that chocolate, sweet yumminess you crave and barely ANY calories (barely...there are SOME). Give it a whirl...good for kids & grown- ups!

Go ahead and grab a handful of these bite-size cookies. They might be little, but they pack a big chocolate punch.

Ingredients



2 tbsp butter, softened

2 tsp canola oil

1/2 cup(s) packed brown sugar, dark-variety

1 tsp vanilla extract

1/8 tsp table salt

1 large egg white(s)

3/4 cup(s) all-purpose flour

1/4 tsp baking soda

3 oz semi-sweet chocolate chips, about 1/2 cup

Instructions

  • Preheat oven to 375ºF.

  • In a medium bowl, cream together butter, oil and sugar. Add vanilla, salt and egg white; mix thoroughly to combine.

  • In a small bowl, mix together flour and baking soda; stir into batter. Add chocolate chips to batter; stir to distribute evenly throughout.

  • Drop rounded half-teaspoons of dough onto one or two large nonstick baking sheets, leaving a small amount of space between each cookie. Bake cookies until golden around edges, about 4 to 6 minutes; cool on a wire rack. Yields 2 cookies per serving.

Notes

  • Indulge your craving for an intense chocolate experience. Buy a 3-ounce bar of fine chocolate with a percentage of 75 or higher on the label. The percentage indicates the combined amount of cocoa bean and added cocoa butter in the chocolate. The higher the percentage, the greater the chocolate taste and the less sweet the product. Chop up the bar and use it instead of the chocolate chips (could affect POINTS values).

Another Wii-Tastic Thing


On Sunday I bought a NEW Wii Fitness program...it's called Wii-Active by EA Sports (they make the Tiger Woods games we love so much)...and though I HATE having to constantly move the nunchuck from the leg holder and dream of buying a wireless controller (which would make life easier) I LOVE this workout!! You have the option of participating in the 30-Day Challenge a la Bob Greene (Oprah's Trainer) or you can customize it. I'm currently doing the 30-day Challenge and LOVE it...in fact I'm going to do another workout after work. It's THAT fun!
I've also been going cycling every wknd...approx. 6-7 kms each time and enjoying that too. Funny how nice weather (or at least the promise of it) can encourage you...at least for me.
Thus far I've lost 3.3 pounds since Sunday...Oh yeah! Still doin Wii Fit btw and I'm hoping that by summer I'll look somewhat like my old self! Here's hopin'!

kidZ

Ugh! Today I had one of my "day care kids", a know-it all 5 year old (I think they're ALL that way) though cute, annoyed the CRAP outta me! He was idolly chatting about nothing and everything when out of the blue he said "My old Library teacher at my old school is even fatter than you..." and I swear to God I shook my head with puzzlement?! Ahhh *sigh* classic WTF moment...I know, I know he's only 5 but still,true or not...JERK! hahaha So yeah...the end.

The Return of Gi-Gantor!

Umm yeah...the date is right..and umm..hehehe...I am Gi-Gantor still....and though that sounds like the coolest Super Hero...it's NOT! Today I'm getting back on the Wagon...I fell off, sorta ran behind it for a bit, got ahead of it, then tripped on a huge rock, slammed into a boulder and let all four wheels and a couple of horses push my face into the dirt a bit more...*sigh*
No more excuses...I have a goal...no magic # or size specifically...just A LOT less of me by August Long wknd...holiday time. HELP ME!!!!!!!!!!!!!!!!!!!!!
